I don’t want Sonarr to do anything besides downloading an NZB and sending it to SABNZBD. At the moment it does something with the downloads, it puts them in other directories, it renames files to completely different shows, it also downloads shows many times in many different qualities.
All I want is that it downloads and NZB, to either a blackhole or sends it to SabNZBd through the API. How do I disable all the other media management stuff?
First off, Sonarr might not be the right tool for your needs . Some of the features you want disabled are the core features of Sonarr.

Media management and directories
The media management (which files have been downloaded) relies of the directory structure. Otherwise, Sonarr wouldn’t be able tell which downloads were needed / wanted.
If you just send the sab category to a directory not monitored by Sonarr, the file would be considered missing forever, and as a result redownload over and over.
There would need to be an entire new Sonarr download method, for example where an episode would be directly unmonitored when a completed download was detected.
Renaming (to different shows)
Renaming can be disabled in the settings. I can’t think of any scenraio where Sonarr would rename it to a different show though.
Downloading in different qualities
This is just a matter of making a correct profile for your needs, and setting the cutt-off to the lowest quality you want.
Maybe explain why you want to use sonarr like this? E.g. your end-goal is a single directory of unsorted downloads with the original names. Why?
Maybe someone can offer an alternative idea that suits your needs…
Many of us do. I have Sonarr set to unmonitor an episode as soon as I delete it. That prevents it from being redownloaded.
I understand why the folder structure would be unwanted in your use-case.
Personally, I was a firm “Windows Explorer + MPC-HC” user, but now I wouldn’t want to go back to that way of watching my media.
Most of us use a playback method through a indexer front-end instead of selecting the files directly from the folder. The easiest for stand-alone single machine use is XBMC.
Might be worth a shot to see if you like it. You just say which root folders you want indexed, and then it present your files in a need pretty interface.
