Is there anything we can do about when a TV show downloads but then doesn’t import? Even if that TV show is not in the completed download folder, it still says it is downloaded 100% but it’s not?
It depends on why it didn’t import.
What is the reason on Activity: Queue? (hover over the icon on the left).
Debug logs will also show you why its failing.

“No files found are eligible for import in c:…” Is there anyway we can get it to search again if we get this error instead of having to manually download?

No, the download didn’t fail and needs to be handled manually, SAB might have failed to extract it properly or it has a weird extension.
