Couldnt find an answer anywhere, so try it here: is there a possibility to configure sonarr in a way, that it doesnt download single episodes when they launch but instead when the season is complete?

You could score single episodes with Custom Formats + Quality Profiles to have a negative score and thus won’t be grabbed automatically (default minimum CF score is 0) preventing them from being grabbed.
