Please add the ability to set the download delay for each series. I’d like to allow some series to download as soon as possible, and force series to wait longer before downloading each episode or season.

Tags to the rescue!
Create multiple delay profiles and add a tag to them. Then you can apply that tag to series, and they will use that delay profile.
As the text of the default profile says: "This is the default profile. It applies to all series that don’t have an explicit profile."
So you’ll want to find your most common scenario and set the default profile accordingly. Then create another profile (or more) with a tag and apply that tag to the special cases.
