How do I use tags

I have been searching this forum and the wiki for information on using tags (not exhaustively, but I have done a few searches) to narrow down the selection of titles to download. My goal is to use them for “must not contain”, “preferred”, and “must contain” words, and from a few of the things I have found, tags is how to do it. But how do you actually enter them? By that I mean how do you differentiate between the three types of words? Something like:

“-sample” to find titles that must not contain “sample”
“sample” to find titles that you prefer contained “sample”
+sample" to find titles that must contain “sample” ?

Check out Settings->Indexers->Restrictions.
There you specify the ‘must contain’ and ‘must not contain’, then you use tags to couple specific rules to specific series.

Crud. I never even thought to look in the indexers. That is just what I was looking for.
